10 Advantages of Eating Raw

The human race learned long ago that cooking meat before eating it would protect them from certain diseases. Since then, this practice of cooking has grown to include all types of foods and is now considered an art. Very few meals are eaten which include raw elements, except for the leafy green salad.
One advantage of eating raw is that it brings Nature’s intentions into focus. When I speak of eating raw I am referring to fruit, nuts, and vegetables, which taste good to the majority of humankind in their basic simplicity - direct from tree, bush or vine.
I realize it isn’t easy to simply abandon thousands of years of tradition and revert back to 100% raw food. Margaret Mead once said, “It is easier to change a man’s religion than to change his diet.” So, to the point, there are 10 advantages to a diet of fresh, whole raw fruits, vegetables, and nuts, which may lead you to find a greater place for them in your diet.
1. Raw foods are better quality; therefore you eat less to satisfy your nutritional needs. The heat of cooking depletes vitamins, damages proteins and fats, and destroys enzymes which benefit digestion. As your percentage of raw foods increases you feel satisfied and have more energy on smaller meals because raw food has the best balance of water, nutrients, and fiber to meet your body’s needs.
2. Raw foods have more flavor than cooked foods so there is no need to add salt, sugar, spices, or other condiments that can irritate your digestion system or over-stimulate other organs.
3. Raw foods take very little preparation, so you spend less time in the kitchen. Even a child of 5 or 6 can prepare most of the items for breakfast, lunch or dinner. This gives children a sense of self-esteem and independence, not to mention the break it gives Mom and Dad.
4. When you are eating raw there’s little chance of burns, unless you’re in the middle of a forest fire or out in the sun too long. Just think - No burns to tongues, the roof of your mouth, or fingers, and many fewer house fires!
5. Cleaning up after a raw meal is a snap. No baked-on oils or crusty messes. And any inedible parts go directly to the compost pile.
6. Eating a diet of raw foods can reverse or stop the advance of many chronic diseases, including heart disease and cancer. Remember, cooking creates free radicals, which are the major cause of cancer. When you lower the number of free radicals your cells are bombarded with, you lower your risk of cancer.
7. A raw food diet can protect you from acute diseases such as colds, flu, measles, etc. Raw foods maintain a healthy body and a healthy body will not become diseased.
8. As long as you combine raw food properly, according to the rules of Natural Hygiene, you will soon reach a level where you no longer suffer from heartburn, gas, indigestion or constipation.
9. It is environmentally sound. With humanity on a diet of raw foods the food industry would close up shop and take up organic gardening. This would save us enormous amounts of natural resources used to produce power for these industries. Think of how many trees and oil reserves could be saved without the need for the paper and plastics used in packaging our processed foods. There would also be less carbon dioxide released into the atmosphere when all the cooking stopped, and more oxygen produced from all the new orchards and gardens, thus helping to reverse the Greenhouse Effect.
10. Eating raw saves you money on food, vitamins, pots and pans, appliances, doctor bills, drugs, and health insurance.
So don’t waste your food, yourself, and our planet by cooking what you eat. Fruits, nuts, and vegetables which are whole, fresh and raw are brimming with life and have the ability to transmit their life force directly to you.

Dark Green Leafy Vegetables are the best source of calcium
According to this article from the Harvard School of Public Health, one cup of collard greens contains 357 milligrams of calcium, but a cup of milk has 306. Collard greens also are one of the leafy greens with calcium that is more absorbable. (Some greens like spinach contain oxalic acid which interferes with absorption of calcium).
In addition to calcium, Collard greens contain Vitamin K which plays a role with calcium in keeping bones healthy and strong. Three proteins in bone depend upon Vitamin K to function. Collard greens are a member of the cabbage family. The leafy vegetable has been a regular part of American cooking in the South, aka ’soul’ food for decades. (They were also popular with the ancient Greeks and Romans).
Other Calcium-Rich, Non-Dairy Foods
1. Fortified beverages like O.J and soymilk. A six oz. serving of calcium fortified orange juice can provide as much as 20-25 percent of your daily value (DV). An eight oz. cup of soymilk can contain as much as 50 percent of your DV. Make sure to check the labels as different brands can vary in their nutritional content!
My tasty tip: Avoid the brands with added sugars. I always opt for unsweetened soymilk to shave out the hidden calories!

The world needs to change to a more vegetarian diet to stand a chance of tackling climate change, according to a major new United Nations report.

The group of international scientists said the greatest cause of greenhouse gas emissions is food production and the use of fossil fuels.
But while the use of coal and oil could be gradually replaced by renewable energy sources like wind and solar, the world will always need to eat.
As the world population increases it is feared that the production of food will become the main cause of climate change and environmental degradation.
The International Panel of Sustainable Resource Management pointed out that agricultural production accounts for 70 per cent of global freshwater production, 38 per cent of land use and 19 per cent of the world's greenhouse gas emissions.
The report, that will be presented to world governments, said the only way to feed the world while reducing climate change is to switch to more a more vegetarian diet.
"A substantial reduction of impacts would only be possible with a substantial worldwide diet change," it read.
Achim Steiner, Executive Director of the UN Environment Programme, said ordinary consumers can help fight climate change by eating less meat.
"The Panel have reviewed all the available science and conclude that two broad areas are currently having a disproportionately high impact on people and the planet's life support systems—these are energy in the form of fossil fuels and agriculture, especially the raising of livestock for meat and dairy products," he said.
Mr Steiner said governments could encourage people to eat less meat by reforming the system of taxes and subsidies so vegetarian food is cheaper.
"Smart market mechanisms, more intelligent fiscal policies and creative policy-making are among the options for internalising the costs of unsustainable patterns. Some tough choices are signalled in this report, but it may prove even more challenging for everyone if the current paths continue into the coming decades," he added.
Lord Stern of Brentford, the author of the influential Stern Review that first argued for economic measures to fight climate change, also believes the world needs to eat less meat.
He has already warned that the price of meat and other "carbon intensive" goods will need to go up to fight climate change.
A few healthy foods
Nutritionist Jonny Bowden notes that cherries are packed with anti-inflammatory properties. They contain antioxidants, thought to help the body protect against the damaging effects of free radicals and the chronic diseases associated with the aging process.
Blueberries
Like cherries, blueberries contain antioxidants found to promote heart health. A 2009 study showed that rats fed blueberries lost belly fat, the kind of fat linked to diabetes and heart disease.
Kiwifruit
This tart little green fruit, with its soft, hairy skin and seeds you can swallow, is chock full of vitamin C--a whopping 115% of what you need to eat in a day. It's also low in calories--just 45 per fruit sans skin.

Dark Chocolate

The Health Benefits of Lycopene
Lycopene is the pigment that gives certain fruits their red coloring. This carotenoid is believed to have strong antioxidant powers, with some studies showing a reduced risk of cancer, cardiovascular disease and macular degeneration. There is no established Recommended Daily Allowance (RDA) for lycopene, but there's evidence that phytonutrients like lycopene are an important part of disease prevention.

1. Ditch Your Nightly Cocktails (Even Wine)
Most everyone knows that heavy drinking is a big health no-no. But when you delve into moderate or light drinking, that’s where things get cloudy.
Moderate drinking -- one drink or less per day for women and two drinks or less per day for men, according to the CDC -- can in fact have health benefits.
For instance, while heavy drinking increases the risk for heart disease, high blood pressure and stroke, moderate drinking has beneficial heart effects, particularly to those most at risk -- men over the age of 45 and post-menopausal women. It appears to reduce the risk of blood clots in coronary arteries that can lead to coronary artery disease and heart attack.
That said, drinking is well-known to increase your risk of cancer – by up to 30 percent, according to a Kaiser Permanente study.
Upon looking into the drinking habits and health of over 70,000 women, researchers found that even one or two drinks a day increased women’s breast cancer risk by 10 percent. The risk of cancer jumped to 30 percent among those who had more than three drinks a day.
"A 30 percent increased risk is not trivial. To put it into context, it is not much different from the increased risk associated with women taking estrogenic hormones. Incidentally, in previous research completed at Kaiser Permanente, we have found that smoking a pack of cigarettes or more per day is related to a similar (30 percent) increased risk of breast cancer," Arthur Klatsky, MD said in a press release.
Further, it didn’t matter whether the women drank wine, beer or spirits; each increased the risk of breast cancer similarly.
So while drinking a glass of red wine or a bottle of dark beer (two for men) every day is not likely to harm your health if you're healthy, you may be better off avoiding it entirely.
2. Eliminate Environmental Toxins
Scientists are now beginning to discover that exposure to chemicals -- indoors, outside, at work and even in the womb -- is a major contributor to chronic diseases plaguing the nation. One of the greatest ways we can acknowledge Earth Day and
protect the environment is to shift toward a plant-based diet
centered on fruits, vegetables, grains and legumes, while eliminating
meat and other animal products from our diets.
Raising animals for food is a leading cause of resource depletion and
environmental degradation. Meat production is inefficient and results
in the needless waste of precious environmental resources. One acre
of land could produce 50,000 pounds of tomatoes, 40,000 pounds of
potatoes, 30,000 pounds of carrots or just 250 pounds of beef. In the
United States and around the world, millions of acres of forests are
cleared and burned to create grazing land for cattle, and crop lands
to grow animal feed.
The nearly 10 billion animals raised for human consumption each year
in the United States excrete massive quantities of urine and feces.
Because these animals are injected, fed and sprayed with antibiotics
and pesticides, their waste is filled with toxic chemicals. Much of
it is washed by rains, untreated, into our waters.
Animal agriculture poses a greater threat to our natural environment
than all other human activities combined. We directly contribute to
massive amounts of ecological devastation by eating meat, eggs and
dairy products. Every dollar spent to purchase animals products
subsidizes this devastation. Each of us can refuse to subsidize
environmental destruction every day by boycotting animal foods. If we
truly care about the planet and its inhabitants, becoming vegan is
crucial for putting our principles into practice.

More and more doctors are becoming vegetarian as the medical evidence in favor of it becomes overwhelming, and as they have success in treating their patients with vegetarian diets.
Though in one sense, it's surprising that there are any vegetarian doctors at all: Medical schools certainly don't endorse meat-free diets, and Western medicine says that proper treatment is drugs or surgery, not food. It's not much better in the food-based disciplines. When I studied nutrition at the University of Texas, veganism and vegetarianism were depicted as dangerous choices popular among only the trendy or naïve.
Here's a good article explaining why doctors are generally uninformed about nutrition.
Of course, when wondering why more doctors don't promote vegetarianism today, it's helpful to remember that doctors used to endorse cigarettes! Change is slow.
So I decided to start compiling a list of vegetarian physicians, or at least those who advocate vegetarian diets, to demonstrate that there are professionals in the medical community who recognize the health advantages of vegetarian diets.
I welcome submissions to this page. Candidates should be credentialed physicians in any country, and their credentials and support of vegetarianism should be listed on a credible website. I won't list a doctor in this section based on hearsay.
