Recipe: Squash Roll Ups
Here is the recipe for the squash Roll- Ups I made tonight. They could probably use another name..LOL
Filling:
1 1/2 cups filberts, soaked 1 to 2 hours
1 1/2 cups dried tomatoes, soaked 1 to 2 hours
1 clove garlic
3/4 tsp Italian seasoning
Add it all to the food processor and process until smooth. Add tomato soak water as needed, but not too much. You want it kind of thick.
Zucchini and yellow squash: The smaller the seeds the better, so nice young fruits work the best.
version 1
Slice lengthwise in the mandolin slicer if you have one, and spread filling thinly, Roll up and secure with toothpicks.
version 2
Slice in rounds and spread filling. Top with another slice sandwich style.
Takes about 30 minutes after soaking
